Ingredients
• 1 red grapefruit, cut into segments
• 1½ avocados, cubed
• 200g canned chickpeas, drained and rinsed
• 185g canned tuna in springwater or olive oil, drained
• 1 jalapeño, finely chopped
• 2 tablespoons fresh coriander, finely chopped
• Salt and freshly ground black pepper, to taste
Dressing
• 2–3 tablespoons fresh lime juice
• Zest of 1 lime
• 2 tablespoons olive oil
Method
- To make the dressing, whisk together the lime juice, lime zest, and olive oil in a small bowl. Chill while preparing the remaining ingredients.
- Arrange the grapefruit segments, avocado, chickpeas, and drained tuna on a large plate or shallow serving bowl.
- Sprinkle over the chopped jalapeño and fresh coriander. Season with salt and pepper to taste.
- Drizzle the dressing over just before serving.
