Veggie & Tuna Lunchbox Patties

Makes approximately 8 patties

Ingredients
• 500g potatoes, peeled and chopped
• 1 × 425g tin tuna in springwater, drained
• 1 cup corn kernels (canned or frozen)
• 1 cup broccoli rice (frozen)
• 1 small onion or 2 spring onions, finely diced
• 1 egg
• 2–3 tablespoons plain flour or breadcrumbs
• Salt and pepper, to taste
• 1–2 tablespoons parsley or dill, finely chopped

Method

  1. Cook the potatoes: Boil in salted water until soft. Drain well and mash until smooth. Allow to cool slightly.
  2. Steam the broccoli rice in the microwave. Set aside and allow to cool slightly.
  3. In a large bowl, combine the mashed potato, tuna, corn, broccoli rice, onion, egg, flour or breadcrumbs, seasoning, and herbs. Mix until just combined.
  4. Using wet hands, shape the mixture into palm-sized patties. If the mixture is too soft, add a little more flour or chill for 10–15 minutes.
  5. Heat a pan with a little olive oil and cook the patties over medium heat for 3–4 minutes per side, until golden and heated through.
