

Makes approximately 8 patties
Ingredients
• 500g potatoes, peeled and chopped
• 1 × 425g tin tuna in springwater, drained
• 1 cup corn kernels (canned or frozen)
• 1 cup broccoli rice (frozen)
• 1 small onion or 2 spring onions, finely diced
• 1 egg
• 2–3 tablespoons plain flour or breadcrumbs
• Salt and pepper, to taste
• 1–2 tablespoons parsley or dill, finely chopped
Method
- Cook the potatoes: Boil in salted water until soft. Drain well and mash until smooth. Allow to cool slightly.
- Steam the broccoli rice in the microwave. Set aside and allow to cool slightly.
- In a large bowl, combine the mashed potato, tuna, corn, broccoli rice, onion, egg, flour or breadcrumbs, seasoning, and herbs. Mix until just combined.
- Using wet hands, shape the mixture into palm-sized patties. If the mixture is too soft, add a little more flour or chill for 10–15 minutes.
- Heat a pan with a little olive oil and cook the patties over medium heat for 3–4 minutes per side, until golden and heated through.
