If you’re looking for a delicious and fun meal that everyone in the family will enjoy, give Tatiana’s chicken taco’s a try! Perfect recipe if you have fussy eaters or family members with different energy requirements as everyone can build their taco as they wish.


Ingredients
- 1kg chicken thigh fillets, fat trimmed, kept whole
- Homemade Mexican spice mix (2 tsp cumin powder, 2 tsp smoked paprika, 1 tsp turmeric powder, 1⁄2 tsp cinnamon, 1⁄2 tsp black pepper)
- 2 tablespoons extra virgin olive oil
- 16- 20 mini flour or corn tortillas
Tomato Salsa
- 5 tomatoes, diced
- 1⁄2 bunch coriander or parsley, chopped
- 1 spring onion, chopped
- 1/2 lime, juiced
Guacamole
- 2 avocados, mashed
- 1⁄2 lime, juiced
- Salt and pepper to taste
Red Onion Pickle
- 1 red onion, thinly sliced
- 2 tablespoons red wine vinegar
Greens
- 1⁄2 cos lettuce, thinly sliced
Method
- Marinate the chicken and keep it in a mixing bowl for a few hours for the spices to infuse the chicken before cooking them on the BBQ or grill or stove top in batches
- Once cooked, slice the chicken into strips and place in a tray
- Meanwhile prepare the side dishes ready to serve
- Heat the tortillas in the oven or microwave just before serving
- Assemble as you like and enjoy ~2 tortilla’s or more depending on your needs
Any leftovers, keep it for a deconstructed Mexican bowl or a toasted chicken wrap. Enjoy!
