High Fibre Bircher Muesli

Ingredients

Bircher Muesli Mix (makes 4 serves)
• 50g BARLEYMAX Original Super Barley Flakes
• 50g rolled oats
• 100g Carman’s Grain Free Granola (Almond, Macadamia, Cashew & Pecan)
• 2 tablespoons psyllium husk
• 1 tsp cinnamon powder

To Assemble (per serve)
• ½ cup (50g) Bircher muesli mix (above)
• ½ cup light dairy milk (if using a dairy alternative, ensure protein fortification)
• 1 tablespoon natural Greek yoghurt
• ½ medium apple, grated OR 5 small (~125g) strawberries, sliced OR ⅓ cup (~50g) blueberries

Method

  1. Mix all ingredients together in a container to make the Bircher muesli mix. Store in an airtight container.
  2. Portion out 50g of the Bircher muesli mix and combine with the remaining ingredients in a jar, container, or bowl. Mix well.
  3. For best results, prepare at least 15 minutes before eating or the night before.
  4. Enjoy!

This Bircher muesli is a simple way to boost fibre intake while still enjoying a balanced, satisfying breakfast. Serve as is or top with extra yoghurt, nuts or fruit to suit your taste and appetite.
