Mango Tiramisu

Mango Tiramisu

You will need:


• 300ml thickened cream
• 1 tablespoon pure icing sugar, sifted
• 1 tsp vanilla bean paste
• 2 large mangoes
• 2 cups light milk
• 2 tablespoons Frangelico
• 30 Italian sponge fingers
• 6 tablespoons crushed pistachios

Method

  1. In a large bowl, whip together the thickened cream, icing sugar, and vanilla bean paste until stiff peaks form.
  2. Slice the mango cheeks into thin slices.
  3. In another bowl, mix together the milk and Frangelico to soak the sponge fingers.
  4. Dip each side of a sponge finger into the milk mixture for a few seconds.
  5. Place 10 soaked sponge fingers on a rectangular plate, side by side.
  6. Spread one-third of the whipped cream over the top.
  7. Scatter one-third of the sliced mango over the cream and sprinkle with 2 tablespoons of crushed pistachios.
  8. Repeat this process two more times with the remaining cream, mango slices, and pistachios.
  9. Enjoy!
