

You will need:
• 300ml thickened cream
• 1 tablespoon pure icing sugar, sifted
• 1 tsp vanilla bean paste
• 2 large mangoes
• 2 cups light milk
• 2 tablespoons Frangelico
• 30 Italian sponge fingers
• 6 tablespoons crushed pistachios
Method
- In a large bowl, whip together the thickened cream, icing sugar, and vanilla bean paste until stiff peaks form.
- Slice the mango cheeks into thin slices.
- In another bowl, mix together the milk and Frangelico to soak the sponge fingers.
- Dip each side of a sponge finger into the milk mixture for a few seconds.
- Place 10 soaked sponge fingers on a rectangular plate, side by side.
- Spread one-third of the whipped cream over the top.
- Scatter one-third of the sliced mango over the cream and sprinkle with 2 tablespoons of crushed pistachios.
- Repeat this process two more times with the remaining cream, mango slices, and pistachios.
