A super easy, well balanced and delicious weekday lunch!


Serves 1
You will need:
- 1 tin of sardines in olive oil or spring water (drain)
- Squeeze of lemon juice
- Cracked black pepper
- 2 slices of wholegrain bread
- 1 tomato sliced
- Handful of rocket leaves
- 1 small carrot grated
- 2 baby cucumbers, halved
- 1/4 avocado (smashed)
- 1 slice of cheese
Method:
- Lightly mash the sardines with a fork in a bowl, add a squeeze of lemon juice, and
season with black pepper. - Mash the avocado onto on side of the bread slice
- Across the 2 slices, layer with cheese, sardines, tomato, cucumber, rocket and grated
carrot. - Enjoy with a glass of Kombucha, mineral water, cold pressed juice or just plain water
