

Serves 6 meal portions
Ingredients
• 250g dry spiral pasta
• 120g bag rocket and spinach mix
• 1 punnet (200g) cherry tomatoes, diced
• 1 large red or yellow or green capsicum, diced
• 2 medium cucumbers, diced
• ½ medium red onion, diced
• 20 (40g) kalamata olives, pitted, drained, diced
• 1 jar (280g) marinated artichoke, drained
• 2 cubes (40g) goats cheese (could sub for feta or halloumi)
• 6x 95g tinned tuna
Dressing
• 3 tablespoon olive oil
• 1 tablespoon wholegrain mustard
• 1 tsp honey
• 1 small lemon, juiced
Method
- Boil the pasta, until its al dente
- Wash and cut all the vegetables and add them one by one in a large bowl (rocket/ spinach mix, tomatoes, capsicum, cucumbers, red onion)
- Add the olives and marinated artichoke and crumbled goats cheese on top of the vegetables
- Make the dressing in a jar – pour on top of the salad when ready to serve – if this is a meal prep meal keep the dressing separate
- Top with tinned tuna or and alternative desired protein (hot smoked salmon, grilled chicken, grilled beef fillet steak)
