Ingredients
500g lean beef steak
1 tablespoon olive oil
1 medium white onion, chopped finely
5cm bulb of fresh ginger, grated or finely chopped
2 cloves of garlic, finely chopped
2 medium carrots, cut into rounds and then quarters
1 large red capsicum, finely chopped
1 large head of broccoli, cut into small florets
125g snow peas, cleaned and roughly chopped into pieces
1 bunch of kale, remove leaves from the steam and cut leaves into smaller pieces
2 microwavable cups of long grain rice
2 tablespoons oyster sauce
1 tablespoon reduced soy sauce
1 tablespoon sesame oil
Optional add ins
Egg, scrambled or sunny side up – 1 egg per serve
Kimchi – 1 tablespoon per serve
Method
On a frying pan, cook steak on both sides until medium rare and remove
In a deep saucepan on medium heat add olive oil and onion
Sauté until brown and then add in the ginger and garlic
Add in carrots, sauté for a few minutes
Add in capsicum, sauté for a few minutes
Add in broccoli, sauté for a few minutes
Add in snow peas, sauté for a few minutes
Add in kale, sauté for a few minutes
Add in microwavable rice and stir into the vegetable mix
Cut steak into small pieces or slices and add it into the vegetable mix
Add in oyster sauce, soy sauce and sesame oil
Stir until well combined. If you need more liquid add some water
If you are wanting to add in the egg, crack eggs onto a non-stick fry pan and serve on top of the fried rice with a portion of kimchi for extra flavour
