Have a young baby or toddler but also madly trying to feed yourself healthy dinners? Ash discovered this one recently with her little bub.
Ingredients:
500g lamb mince
2/3 large avocado, cut into small pieces
One large egg
1 tsp coriander
Squeeze of lemon
One roasted beetroot
2/3 cup greek yoghurt
2x tsp garlic and onion infused olive oil
Regular olive oil for cooking
Method
Blend beetroot with yoghurt and set aside in a serving bowl
Add lamb, infused oil, avocado, egg and coriander to a mixing bowl and gently mix together
Shape mixture into baby palm size shapes, the thickness of an adult finger
Over medium heat, cook koftas, turning every couple of minutes with a pair of tongs
Let cool and serve to baby (or partner!) with beetroot dipping sauce for dinner.
NOTE: You can also shape into burger patty size (as per picture above)
To balance your meal make sure you add some low GI carbohydrates ie. Baked sweet potato and some tasty vegetables ie. Pre mixed kale slaw salad
