Ingredients:
· 3 eggs
· ½ cup extra virgin oil
· 1/3 cup honey
· 1 tablespoon brown sugar
· 1/3 cup light milk
· 1 ½ cups wholemeal self-raising flour
· 1 tsp vanilla essence
· 1 tsp cinnamon powder
· 1 tsp nutmeg
· ½ cup chai tea mixture (made with 1 tablespoon lose chai tea leaves)
· 1 tablespoon cocoa powder
Method
1. Pre-heat oven to 180 degrees Celsius
2. Beat the eggs with the oil, honey, sugar and milk till combined
3. Infuse the chai tea in hot water for at least 5 minutes
4. Gradually add the self-raising flour to the wet ingredients
5. Once combined, add the vanilla, cinnamon, nutmeg and chai tea mixture
6. Let it beat till the batter is well combined
7. If the batter is too thick add more chai tea mixture
8. Pour in lined muffin tins and bake for 20 minutes
9. Once cooled, sprinkle with cocoa powder
