Lockdown Baking Inspo: Strawberry & Walnut Muffin Recipe

Bored and need to blow off some boredom or stress during lockdown? Energy redirected towards something positive and healthy to nourish your body is a good way to function! Ash made these delicious muffins this week. They are quick, tasty and freeze well!

Muffin Ingredients:

  • ⅓ cup honey

  • 1 Tbsp brown sugar (helps it caramelise a little)

  • 1 ¾ cups white wholemeal flour

  • ⅓ cup traditional oats

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon fine sea salt

  • ⅓ cup extra-virgin olive oil

  • 2 eggs, preferably at room temperature

  • 1 cup plain Greek yogurt

  • 2 teaspoons vanilla extract

  • 2 cups diced strawberries

  • 50g crushed walnuts

Method

  1. Preheat oven to 180 degrees

  2. Grease a 12 portion muffin tin with butter or oil

  3. Put all the dry ingredients: Flour, baking powder, baking soda into a bowl

  4. In another bowl, combine the oil, honey and eggs. Beat together with a whisk. Add the yogurt and vanilla, and mix well.

  5. Add the wet ingredients into the dry ingredients

  6. Fold in the strawberries and mix gently

  7. Divide batter into 12 and put into tin

  8. Sprinkle the top of each with crushed walnuts

  9. Bake for 15-20 minutes, or until golden on top

  10. Set to cool

  11. Enjoy with a warm winter chai, coffee or tea!
