Mexican Pizza Recipe With Healthy Homemade Base

This pizza is high in fibre and protein due to its innovative base ingredients! A great family favourite which is super tasty and filling. Feel free to add a side salad to compliment the dish. Ash loves this one.

Makes 2x delicious pizzas, serves 4

Pizza Base Ingredients

  • 3.5 cups of wholemeal self raising flour

  • 2 cups of low fat greek yoghurt

  • Shake of salt

  • Some extra flour to knead

Pizza Topping Ingredients

  • 500g lean mince meat

  • 0.5 Taco Seasoning Packet

  • 1x large red capsicum, diced

  • 1x punnet cherry tomatoes, halved

  • 0.5 tin of drained sweet corn kernels

  • 0.5 tin of red kidney beans, drained

  • One avocado

  • Small tub of light sour cream

  • Tasty cheese

  • Pizza sauce for base (or passata)

  • Olive oil

Method:

  1. Pre heat the oven to 180 degrees celsius

  2. Cook the lean mince with a little olive oil and taco seasoning, set aside to cool

  3. Mix together the pizza dough ingredients in a bowl

  4. Using a chopping board which has been lightly floured, knead together for 5-10 minutes

  5. Split the dough into two

  6. Using a rolling pin dusted with flour, roll each lot of base mixture into the best circle you can manage (Remember shape doesn’t really matter, taste does!)

  7. Put the bases in the oven for ten minutes to lightly cook/bake

  8. In the meantime prepare all the rest of the topping ingredients

  9. Take out the bases from the oven when ten minutes is up and turn up the oven to 220 degrees

  10. Spread pizza sauce generously on the base of the pizzas with a spoon

  11. Add some tasty cheese then layer on the veggies, meat and red kidney beans

  12. Top with all some tasty cheese and decorate with avocado

  13. Cook the pizzas at 220 degrees for 15 minutes

  14. When done remove from oven

  15. Add some dollops of light sour cream

  16. Enjoy 🙂
