Ash got happy baking last weekend and these were a great success at a friends farewell picnic. You can do the easy version which doesn’t involve crosses on top and jam to make them shiny and pretty too if you’re feeling lazy. Otherwise take your time and enjoy!
Ingredients:
Buns
Zest of one orange
2x cups of wholemeal flour + a little extra for piping (Approx. 100g)
250mL light/soy milk/lactose free milk, heated until its warm
1 Tbsp of dried instant yeast
Pinch of salt
70g Olive Grove Margarine
50g honey
1x egg
1.5 tsp ground cinnamon
1.5 tsp ground nutmeg
0.5 tsp ground cloves
150g sultanas
Apricot Jam
Piping/To Make Crosses (Optional)
80g plain flour
Pinch salt
Tsp olive oil
100mL hot water
Apricot Jam To Brush Buns (Optional)
2xTbsp Apricot Jam
Tbsp Water
Method
Place warm milk and yeast into a bowl and mix until dissolved
Mix wholemeal flour, salt, margarine, honey, egg and spices with a wooden spoon
Add sultanas and a mix a little further
Find strongest family member and make them knead for ten minutes by hand on a chopping board that has lightly been sprinkled with flour 😉
Place in a large bowl and cover with surround wrap or kitchen towel. Keep in a warm place for 30 minutes. The mixture should rise to about 2x the original size
Pre heat the oven to 220 degrees Celsius
Divide into 12 pieces and shape into balls. Place on a baking tray which is lined with baking paper
Combine the piping ingredients. If still too thick you can add a little more hot water
Transfer to a piping bag or make your own and pipe crosses onto the top of the buns
Bake for ten minutes. Then turn the oven down to 180 degrees and to grill for 2 minutes to brown the tops
Take out of the oven
Lightly heat jam and water on low heat in saucepan
Brush buns with Apricot Jam whilst still hot
Leave to cool on a baking rack
