½ cup almond meal
1 tbsp unsweetened almond milk
1 tsp olive oil – for cooking
Top with 2xhandfuls of blueberries and about 1/2 cup greek yoghurt. Finally dust with a little cinnamon
Place all ingredients (except for olive oil and toppings) into a food processor or blender and blend until mixture is smooth (If your mixture is too runny, gradually add more almond meal until mixture thickens).
Heat olive oil in a non-stick pan over medium heat.
Pour pancake batter into pan and cook on one side until you see small bubbles start to form on the uncooked side of the pancake.
Flip the pancake over and cook the other side for 1-2 minutes until cooked through or until golden.
Top with berries of your choice, extra banana, Greek yoghurt or a small amount of 100% pure maple syrup.
Add handful of blueberries in with pancake mix and only use 1/2 banana
Add mixed berries on top including blackberry and raspberry
Use wholemeal flour instead of almond meal if you are a more active person
