A good breakfast snack when you are running out the door and grabbing a coffee on the way to work. Wholemeal flour which has more fibre to fill you up. Protein in the ham, egg, milk and cheese to keep you going well into the morning and a mix of herbs and vegetables to tickle the taste buds!

Ingredients

1 1/2 cups wholemeal self-raising flour

1 cup grated tasty cheese

1/2 cup chopped semi dried tomatoes (drained)

100g ham off the bone, diced

1 zucchini, grated

1/4 cup thinly sliced chives

3/4 cup skim milk

1 egg

Cracked pepper

Method

Preheat the oven to 200 degrees. Grease 12 muffin baking tin. Whisk egg and milk together. Sift in flour and add all other ingredients. Gently mix and then spoon into tray. Bake for 15-20minutes of until lightly brown on top.
