Don't be deceived. This is super simple and quick (seriously 5 mins)

Ingredients:

1 multigrain wrap/2 slices multigrain bread

1/4 avocado or hommous

1 egg

50g ham or turkey off the bone (chopped)

Rocket or baby spinach (handful)

1/2 Tomato (sliced)

1 spring onion (sliced)

Method:

Crack an egg into a bowl and quickly whip. Add pepper and basil. Put small bowl ontop and pop in the microwave for one minute on high. In the meantime spread the avocado on the wrap or toasted bread. Add ham. When egg in done add that. Then throw on all your veggies on top. Either eat like that or wrap neatly in aluminium foil to have on the run! If you don't have to run you can always scramble all the ingredients with a splash of milk or toast the wrap/sandwich (I like to do both!).
