Ingredients:

6-8xsourdough thin sliced french bread (~2 should fit size an screen of iPhone)

1xtomato or 10 cherry tomatoes halved

1/2 red capsicum

1/4 bunch basil chopped

1/2 small purple onion

100g low fat ricotta

1/2 Lemon

Balsamic Vinegar

Olive oil

Pepper

Method:

Cut up tomatoes, onion, basil and capsicum. Squeeze half a lemon into mix and add pepper and a drizzle of olive oil. Spread ricotta on bottom of sourdough. Top with vege mixture. Lightly add some balsamic over the top. Bon Apetite
